8 Places in Dallas to Pick Up Excellent Charcuterie
Ribbons of ham, rounds of fat salumi, smooth pies – sausages are and will continue to be the advocates of carnivorous pastures. To help with a task like this, we’ve rounded up some of our favorite ham suppliers and Brie supporters who are handing out excellent sausage boards.
With a home base in the Vietnamese bakery and sandwich shop Garland, Quoc Bao Bakery, Cha cutie, Riffs at the crossroads of Vietnamese cold cuts and French-style sausage boards. The chicken liver mousse has always been an umami highlight. But she also makes pale, pink cottage hams, wispy slices of cured lardo and dill, and burnt pecan rillettes with her fat cap nicely dusted with herbal powder. It may be a newcomer to Texas, but Eataly is calling on Italy’s ancient history of Salumi and Formaggi to bring Dallas some of the best cured meats in the country. It’s easy to get a glimpse of the Italian salumeria here: drying elongated pieces of meat hang on the counter, where you can show and select items for your sausage board. In one case you will find the Formaggi – fresh, homemade Flor di Latte Mozzarella and Stracciatella, goat cheese with hazelnut coating, sheep cheese with truffle veins running through it.
